Ingredients

20-25 minutes
4-5 servings
  1. 1Capsicum (cut in rings)
  2. 1 tablespoonCapsicum (finely chopped)
  3. 4-5Potatoes (medium size, boiled & mashed)
  4. 1 tablespoonCarrot (grated)
  5. To tasteSalt
  6. 1 teaspoonDry fenugreek leaves
  7. 1/2 teaspoonTurmeric powder
  8. 1/2 teaspoonCoriander powder
  9. 1/2Red chilli powder
  10. 1/4 teaspoonPepper (crushed)
  11. 1 pinchAsafoetida
  12. Oil

Steps

20-25 minutes
  1. 1

    Heat oil in a wok, add asafoetida in it and allow it to splatter.

  2. 2

    Now, add chopped capsicum in it and cook it well then mashed potatoes in it.

  3. 3

    Now, add all spices and salt in it and mix them well.

  4. 4

    Now cook it for 8-10 minutes on medium flame then switch it off.

  5. 5

    Now allow that potato mix it cool down a bit then stuff it in capsicum rings.

  6. 6

    Meanwhile, heat oil in a pan and shallow fry stuffed capsicum rings till it become nicely cooked. (NOTE- if you want you can add onion and garlic in it too. And, if you want you can stuff capsicum rings with cottage cheese/Paneer or mixture of cottage cheese and potato.)

  7. 7

    Stuffed Capsicum is ready to serve.
