I remember Grandma always made braised fish for her grandchildren in her own special way, and it was incredibly delicious.

Clean the fish and cut it into serving-size pieces.

Peel and thinly slice the ginger, then layer it on the bottom of the pot.

Thinly slice the pork fat (or pork belly for a richer flavor) and place it on top of the ginger. (Grandma used pork fat when times were tough, but the fish was always rich and tasty.)

Arrange the fish on top, then sprinkle with chopped scallions and green peppercorns.

Prepare the braising liquid: mix water, fish sauce, caramel sauce (made by caramelizing sugar), a pinch of salt, and a little MSG. Stir until dissolved, then pour enough to just cover the fish. Place the pot on the stove and simmer until almost all the liquid is gone, adjusting the seasoning to taste.

Simmer until the sauce is thick and the fish is fragrant and beautifully colored, with no fishy smell.
