Heat the olive oil in a pot over medium heat. Add the onion and cook until softened. Add the finely chopped eggplant and stir. Add the salt and bulgur, and mix everything together.

Blend the tomatoes with 1/2 cup water (120 ml) in a blender. Pour the tomato juice over the bulgur mixture. Lower the heat and cook until the bulgur is tender. Serve with salad and cucumber yogurt. Enjoy!

Note: You can add 1/2 cup cooked chickpeas for extra flavor and nutrition.
