Curried Carrot and Plantain Fondant

Steps

Wash and cut veggies. Cut plantain to 1inches.

Heat pan add oil and when hot sear plantain. Take out. Fry onions. Add the carrots, and fry a little. Pour stock and add seasoning. Add curry powder stir. Check taste and allow to boil. Drop back the plantain and cook for 5mins. Add the chopped green bells and habanero pepper. Serve hot.
