Ingredients

  • 5 gmint, fresh
  • Spiced ginger 🍪
  • Blueberry 🔮
  • Mint 🍃
  • Rose water & vanilla ice 🌹
  • Mocha coffee ☕
  • 100 gginger cookies
  • 2.5 mlcinnamon, ground
  • 100 gblueberries
  • 1.5 lmilk, full-cream
  • 5 mlvanilla paste
  • 5 mlrose water
  • 15 mlcocoa
  • 5 mlcoffee
  • 600 gsugar, white
  • 16egg, yolks (300g)
  • 450 mlcream

Steps

  1. 1

    In a pot add milk and cream and heat up slowly

  2. 2

    In another bowl whisk egg yolks and sugar together

  3. 3

    Temper the eggs with about 2 cups hot milk mixture

  4. 4

    Add egg mixture to pot on a low heat stirring constantly

  5. 5

    Stir until it reaches 82°C-85°C. The foam should be gone and it should not have an eggy taste

  6. 6

    Strain custard into clean bowl

  7. 7

    Divide custard into five separate bowls. Flavour custards as described in following steps and cool completely in fridge before churning

  8. 8

    Mocha coffee☕: Mix in coffee and cocoa. Let chill

  9. 9

    Rose water & vanilla 🌹: mix in both essences. Let chill

  10. 10

    Mint 🍃: Chop mint finely. Mix mint in custard and strain after 10 minutes. Let chill

  11. 11

    Blueberry 🔮: Blend blueberries. Mix with custard. Strain after 10 minutes. Let cool.

  12. 12

    Spiced ginger 🍪: Break cookies finely and mix with cinnamon into custard. Let cool.

  13. 13

    As soon as custards are cold churn each custard individually in ice cream maker (follow machine instructions). Place in container and freeze
