After Christmas, I really fancied something that was quick, light, simple and Italian! This is a simplified version of a classic carbonara for when you are tired and have eaten a bit too much...!

Get your ingredients ready

Boil linguine as per packet instructions

Beat two eggs. Grate 40g Parmesan into the eggs. Mix well.

Finely chop bacon and fry for a few minutes.

Drain pasta, keeping some water back. Add to the frying pan and mix with bacon. I also add peas at this point too sometimes.

Take off the heat. Add the egg and cheese mix. Stir quickly so the egg doesn’t scramble.

Serve with a bit more Parmesan and some pepper if you like.
