First of all mix together carrot, sugar and cardamom powder. Keep this aside.

Preheat the Idli Steamer with water.

Grease the Idli Moulds lightly with a few drops of vegetable oil. Fill in the moulds less than half with the idli batter. Drop a tbsp of carrot mixure over the idli batter and spread it evenly as a single layer. Then top this layer with another round of the idli batter to get the moulds completely filled.

Now steam the idlies in the Idli Steamer for 10-15 minutes over a medium heat. Allow the steamed idlies to rest for few minutes, remove them from the moulds and cut them into halves.

Serve the carrot stuffed idli with sambar or tomato-onion chutney.
