Onion, Pepper Sauce with Fried Yam

This Sauce is traditionally eaten in Nigeria with boiled yam or roasted yam. As long as there's yam, please eat on. Normally the sliced peppers and onions are eaten raw with the addition of palm oil. HOT!!
Well you can sauté the onions. One of my girlfriends mum got me addicted to the dish. Each time am at her bouse, the woman serves it raw with boiled yam. Anyways i opted for fried yam and not much difference...

Cook, roast or fry your yam. Set aside.

Wash the peppers and onions.

Slice the peppers and onions.

Place fry pan on low heat.

Put 2 cooking spoon palm oil in the pan. Allow to heat up a little.

Add the onion and peppers and cook on a very low heat.

Add seasoning cubes and taste for salt.

Allow the onions to get caramelise a bit. There's some deliciousness about caramelise onions that I still can't figure out.. yummy

Serve alongside yam, plantains, bread..
