Ingredients

Serves 5 to 6 servings
  1. 2.2 lbsbeef stew meat (such as chuck, shoulder, or beef cheeks)
  2. 2-3carrots
  3. 2onions
  4. 3 1/4 cupsBurgundy red wine (750 ml)
  5. 4-6white mushrooms (button mushrooms)
  6. Bouquet garni (bundle of herbs such as thyme, bay leaf, and parsley)
  7. Salt, pepper
  8. 2 tablespoonsflour (about 16 grams)
  9. 2 tablespoonsbutter (about 30 grams)

Steps

  1. 1

    Cut the beef into small pieces and marinate it in the red wine with the bouquet garni and 1 sliced onion. Let it marinate for at least 2 to 3 hours, or longer if possible.

  2. 2

    Remove the beef from the marinade, drain it, pat it dry lightly, and set aside.

  3. 3

    In a Dutch oven, sauté the second sliced onion in the butter, then add the beef and brown it. Add the flour and continue cooking.

  4. 4

    Add the reserved wine, sliced carrots, and sliced mushrooms. Simmer on very low heat for at least 3 to 4 hours.
