  3. salt, pepper, turmeric
  4. shredded cheese, parsley
  5. egg and breadcrumbs for coating
  6. frying oil
  7. for the filling, use your choice of ingredients

    As always, I don't use exact measurements and usually cook by feel, but this recipe is so easy that I'll give you details for each step. You can adjust the seasoning to your taste. For about a dozen croquettes, I used 3 large potatoes, cooked in the microwave in a freezer bag for 8 minutes.

    Mash the potatoes, then add a handful of chopped parsley, salt, pepper, and a little turmeric. Add about 2 tablespoons of shredded cheese (about 15 grams). Mix everything together by hand. For the filling, use whatever you like (meat, fish, or canned tuna). Prepare a flavorful filling with tomatoes, meat, and spices of your choice, and let it simmer well.

    To assemble, take a small amount of mashed potato, form a ball in your hand, and use your fingers to make a hole in the center. Widen the hole, add a little filling, and close the hole with a bit more mashed potato. For a 'flower' shape, use a cookie cutter, or simply flatten a ball of mashed potato like a patty, add some filling, and place another flattened ball on top.

    Cut the patty with a drinking glass if you like, then hold the patty in one hand and pinch the edges with your fingers to make small 'bridges' like petals. Make a hole in the center with the handle of a small spoon. Dip the croquette in beaten egg, then coat with breadcrumbs. You can repeat dipping in egg and breadcrumbs for extra crunch.

    For the coating, beat 2 eggs in a small bowl. Dip each croquette in the egg, then coat with breadcrumbs. I double-coated them by dipping again in egg and breadcrumbs. Heat a large pot with plenty of sunflower oil, and fry the croquettes for 2 to 3 minutes. Lower the heat if needed. That's it!
