Soak 2 cups rice and one cup urad dal overnight. Grind it to a paste in morning.
Add salt and give a good mix and rest it to ferment (for quick ferment, keep in preheated microwave) - 2
Heat oil in a pan. Crackle jeera mustard seeds and curry leaves. Saute onions. Add salt and turmeric powder. Mix in mashed potatoes. Sprinkle chopped coriander.

Use ladle to pour batter on greased nonstick skillet. When it gets cooked, spread schezwan chutney and mint chutney to it's corners. Place potato stuffing in centre. Roll the dosa, remove onto a plate, cut small rolls and serve hot..
