Steps

Assemble all ingredients at one place.

Wash brinjals, slit cut and keep them separately.

Soak tamarind in warn water, remove it's seeds and make a slurry tamarind thick paste.

Heat Oil and add brinjals after wiping them with dry cloth and deep fry them nicely.

Once fried, remove brinjals and keep then them separately.

Remove oil, with remaining oil add cardamoms, clove, green chilli, cumin along with cinnamon sticks, saute them for a minute or see till we smell an aroma of dry Indian masala.s.

Quickly add Kashmiri red chilli powder, turmeric powder, salt and hot water, bring it to one boil.

Now mix Tamarind homemade paste in boiling mixture and cook for 4 to 5 mins or till gravy thickens.

Now reduce the flame and add fried brinjals into the gravy one by one, cover them with lid and allow them to cook and get more thicker.

Once ready, pour in serving bowl, garnish with little coriander and treat them to your beautiful family members with hot chapatis.
