Wash, cut and pre boil the kienyeji chicken (add some salt)until tender.

Drain the excess stock and put it aside...add your chopped onions into the chicken and stir well. I don't add oil because the chicken has it's own fat

Peel the garlic, turmeric & ginger. Crush them together to make a good paste. Add it to the chicken and stir well. Give the spices sometime to simmer and get absorbed by the chicken

Chop the carrots,tomatoes, courgette, hoho into small cubes and add to the Chicken and stir well.

Make sure not to overcook the chicken, add salt to your liking. When the chicken is almost ready, chop the celery and sprinkle it on top.of the chicken. Cover and put off the heat. The celery gives the chicken a good taste.

Serve with chapati. Enjoy
