Soak the kabuli chana n chana dal overnight or early morning. Pressure cook them with salt, cloves n cinnamon n 1 tea bag so chana turns dark in colour.

Take oil in a pan, fry the onions till dark brown, add the tomato puree, cook fr a while then add chole masala, garam masala chilli powder, black salt, anchor. mix well and add the chana and potato (optional) along with the water cook for atleast 10-15 mins. just before switching off the gas add kasuri methi.

Garnishing: just before serving take a little oil in a kadchi, add ajwain,green chilli, sprigs of ginger and add that to the Chole. Garnish it with lemon juice n coriander leaves n serve hot. Serve with garnished onions on the side serve with hot hot wheat purists or bhatura or parathas
