Coconut White Rice and chicken stew

Add coconut milk to a pot on a medium heat,when it boils pour in the parboiled rice add a pinch of salt and peas.allow to cook.when rice is almost done add the carrot and steamer

Fry chicken until golden brown and set aside,in a separate pan add the desired amount of oil add the onion together with garlic and ginger paste sautee for 2 minutes

Pour in your already grinded and boiled tomato mix and allow to Fry on a low heat.Add in your seasoning and continue to stir when the stew is done add the fried chicken and allow to cook for 2 minutes

Serve and garnish with cucumber and carrot. Enjoy the rice with a chilled cup of pineapple juice
