Being pregnant, I try to eat as many fruits and veggies as possible. My daily juice changes with what I have on hand, but I always try to incorporate kale (or some green), carrots, and lemons. Although the juice doesn't always taste spectacular, I can always count on getting a big boost of energy.

Veggie juice is a great way to use up those veggies in your veggie box or make use of a bountiful garden. The fresher the veggies the better, but it's perfectly fine if you want to use things that are wilted or soon to be bad.

Ingredients

  1. 1-2carrots
  2. 1-2 stalkscelery
  3. Halfa bunch of green curly kale
  4. 1beet
  5. 1grapefruit, peeled
  6. 3lemons

Cooking Instructions

  1. 1

    Wash all veggies well. I don't peel my carrots or beets, but that's a personal decision.

  2. 2

    Put all ingredients through the juicer of your choice. Note: the colder the veggies when you start, the colder (and tastier) you're juice will be.

  3. 3

    Stir your juice well and drink immediately.

Oh I wish I had a juicer! Something to invest in eventually... I'm guessing you can't make juice using a blender right?
