Ingredients

  1. 1large bunch or 4 cups chopped Spinach (Palak) or 250 gm
  2. 3/4 cup(approx. 150 gm) Paneer (cubed into 1/2-inch pieces)
  3. 1-2Green Chillies, seeded and chopped (or to taste)
  4. 1/2 teaspoonCumin Seeds, optional
  5. 2medium size Onion, finely chopped (approx. 1/2 cup)
  6. 1medium size tomato
  7. 1/2 teaspoonKasuri Methi (dry fenugreek leaves), optional
  8. 1/3 cupWater
  9. 2 tablespoonsOil + 1 tablespoon Butter
  10. to tasteSalt
  11. 1 tspred chilli powder
  12. 1/2 tsphaldi powder
  13. 1 tspdhaniya jeera and garam masala powder

Steps

  1. 1

    Clean and wash spinach in water to remove any soil or impurities. To blanch the spinach, boil it in salted water for 2 minutes.

    Drain it using a big perforated spoon or a strainer.

  3. 3

    Immediately transfer drained spinach into cold water and keep for a minute.

  4. 4

    Drain excess water and transfer blanched spinach to the medium size jar of a mixer grinder.

  5. 5

    Pan or kadhai over medium flame. Add paneer cubes and shallow fry them until the sides turn light brown. Transfer them to a plate and keep aside. You can remove excess ghee or oil from it by placing them on absorbent kitchen paper napkin.

    Add onion, tomato, cashew, ginger, garlic, green chilli, kashuri methi, variyali (Fennel seeds), dry coconut in the jar. Make smooth paste.

    In the pan add oil and mustard seeds and neeta and hing.

    Add paste and cook for 20 to 25 mins in low flame.

  9. 9

    After 25 mins add dry masala.

  10. 10

    After 2 mins add palak puree and 1/2 cup of water.

  11. 11

    When gravy starts to boil, add shallow fried paneer cubes and cook for 3-4 minutes.

    After 2 mins palak paneer is ready for serve. Garnish with onion, lemon and fresh coriander.

    Transfer it to a serving bowl and serve with tandoori roti,  or butter naan.
