Ingredients

  1. 1.5 cupdry roasted quinoa
  2. 2.5 cupsmix vegetables (cabbage, beans, tomatoes, carrot, capsicum, green peas, onion, garlic and ginger) finely chopped
  3. 1 tspoil
  4. 1/2 tspmustard seeds
  5. 1 pinchasafoitida
  6. as neededFew curry leaves
  7. 1 tspcumin seeds
  8. 1 tspeach red chilli powder, turmeric and salt as per taste
  9. 4-5finely chopped green chillies
  10. 1/2 cupchopped coriander to garnish
  11. 1-2 tspcurd
  12. 3 cupWater

Steps

  1. 1

    Heat oil, add asafoitida, add cumin seeds and mustard seeds and curry leaves. Add onion, garlic and ginger. After roasting for a few min, add all vegetables and roast for a few min.

    Dry roast quinoa and keep aside.

    Add quinoa to the vegetable mix and give it a good stir.

    Mix well with the spices and cook for a few min.

    Add water, curd and cook in a cooker for two whistles.

    Add chopped coriander and serve hot with green chutney.
