Pan Roasted vegetables

Having discovered the beauty of a doublesided pan.....i surely have gone out of my way to cook my meals using it.

Roast vegetables are a healthy way of cooking your veges....you can either eat them hot with some roast chicken or add feta cheese and turn it into a cold roast veg salad after adding French dressing.

At times ave blitz these veges to turn them into a roast veg soup.....delish with a side of toasted butter bread.

Ingredients

  • 1butternut cubed
  • 1large courgette cubed
  • 2large carrots cubed
  • Baby potatoes
  • Chopped garlic as much as you want
  • 1/2 teaspoonMixed herb
  • 3 tbspCanola oil /butter
  • 1 tbspbrown sugar
  • Pinchsalt
  • 1.5 cupscoloured peppers

Steps

  1. 1

    Add all ingredients into your double side pan....

  2. 2

    Cook on low heat until well cooked....toss and serve as a side dish/blitz to serve as a soup or serve with feta cheese added plus dressing of your choice as a salad...
