My family loves these light, flavorful tacos. Especially good on hot summer days.

My family loves these light, flavorful tacos. Especially good on hot summer days.

Preheat grill to as hot as possible

Mix taco seasoning and evoo. Pour mixture over chicken, be sure to coat all pieces thoroughly.

Grill chicken 2 minutes each side. (Gives beautiful grill marks,and seals in the juices)

Lower temp to medium. Cook chicken until cooked to proper temp. (About 8- 10 minutes each side).

Cut cooked chicken into 1/2 inch pieces.

We serve family style, each person making their own tacos. I like to garnish with fresh grilled jalapeños, diced tomatoes, guacamole, and cheese. Serves my family of 6 big eaters, with leftovers.
