I needed to use up the bacon so i thought of this to try. It is like Shakshuka eggs in sauce italians call it eggs in hell then there is a mexican version very spicey. But there are so many versions this is mine. Really lovely and you can make it for 4 people all in one. I am cooking it for 3 add another egg for 4 people. #lunch #Eggs #Breakfast.

Melt the butter and adf the onion fry for 1 minute then add the garlic and bacon bits and fry until juices go and until bacon is crisped. Keep tossing over.

Bacon crisped. Next add the herbs, sundried tomatoes. Then the tinned tomatoes. Then the balsamic vinegar and mix let it come to the boil stir then add the 3 eggs seperatly.

Eggs. Let it bubble for 2 minutes then lower the heat to simmer until you see the egg yolk is cooking. Up to you if you want the yolk soft or hard i personally like it soft but cooked.

After eggs havve cooked for 3 minutes add the mozzeralla cheese inbetween each egg. You could finish off in the oven or leave it simmering to finish. Takes about 5 minutes.

Add the salt and pepper.near the end. Let it stand for 2 minutes before serving.
