Ingredients

20 minutes
Serves 4 servings
  1. 14 ozpumpkin (about 400 grams)
  2. 2pears
  3. 1carrot
  4. 1onion
  5. 3 tablespoonsevaporated milk (50 ml)
  6. 4 1/4 cupswater (1 liter)
  7. Black pepper
  8. Salt
  9. Extra virgin olive oil
  10. Optional: flax seeds, sesame seeds, chia seeds, etc

Steps

20 minutes
  1. 1

    Peel and chop the pumpkin, carrot, onion, and pears. Place them in a pot with 4 tablespoons of extra virgin olive oil. Sauté for a few minutes.

    Add the water, season with salt and pepper, and cook for 15 minutes.

    Blend the vegetables, add the evaporated milk, mix well, and adjust salt and pepper to taste.

    Chill in the refrigerator until ready to serve. Sprinkle with seeds before serving.
