Delicious pumpkin soup, perfect to serve very cold. You can make it well in advance and keep it in the refrigerator.

Peel and chop the pumpkin, carrot, onion, and pears. Place them in a pot with 4 tablespoons of extra virgin olive oil. Sauté for a few minutes.

Add the water, season with salt and pepper, and cook for 15 minutes.

Blend the vegetables, add the evaporated milk, mix well, and adjust salt and pepper to taste.

Chill in the refrigerator until ready to serve. Sprinkle with seeds before serving.
