I call this drunkards pasta salad because it's a fun activity to make after a few cocktails and it's a good food after a few cocktails at a backyard party or just at home. Good food, good times. Isn't that what it's all about?

Ingredients

240 mins
12 servings
  1. 1 boxrotini pasta (whole grain)
  2. 1 bottleItalian dressing
  3. 1/4 cupbalsamic vinegar
  4. Oregano
  5. Lemon pepper
  6. 1-8 oz.block pepper jack cheese
  7. 8 sliceshard salami
  8. Approx. 24 slices pepperoni
  9. 4mini sweet peppers
  10. 1small yellow onion
  11. Approx. 1 small handful fresh cilantro
  12. Parmesan cheese

Cooking Instructions

240 mins
  1. 1

Cook pasta to box instructions. Drain. Remove from heat. Add a bit of oregano and lemon pepper while it's still hot. Mix. Let stand till its room temp.

  2. 2

Once pasta is cooled, add the bottle of Italian dressings do the balsamic, mix. Chop salami slices like a pizza, squared. Cut in half, then strips, then pieces. Cut pepperoni into quarters. Work it a little because they will stick together. You want all the pieces separated. Add to pasta. Cut cheese into 1/4 inch slices, then quarter. Cut peppers into strips, cut onion like the cheese. Slice then quarter. Chop the fresh cilantro. More oregano. Add all to the pasta. Mix well. Now when I say mix well, I mean mix well. Stir that junk for about 8 minutes. Your arm should be sore when your done.

  3. 3

Refrigerate. At least 3 hours. Trust me, it'll make a difference in taste. Add a bit more spices and mix well after refrigeration and serve. It's the perfect food after a night of adult beverages, because all you need to do is spoon it into a bowl and eat. It's hearty enough to be a meal in and of itself. Also perfect to throw together and make for a bbq or backyard summer party. A very versatile dish and flavor for days. ENJOY!

I've always loved to cook, it's probably my favorite hobby. I'm not a huge fan of recipes because half the fun of cooking is experimentation and trial and error. I suggest ya'll do like me and use a recipe as a guideline only! Add your own stuff, try your own methods.Just a bit of background on me. I taught myself to cook when I was a younger, poorer man. Using and experimenting with cheap ingredients and utilizing stuff I already had in the house. Had to streach those dollars ya know? Hence the Whitetrash moniker.I'm a single guy so most of what I share on here I've cooked for myself and myself alone. I like to make big batches of stuff and eat on it for a few days. I use simple methods and ingredients and try to maximize quality while spending as little money as possible. I will always be adding recipes as I cook them. Bon appetite!
