I love this easy healthy soup which is ready in no time (and can also be frozen).Top with feta cheese and serve with a mandatory slice of buttered toast
Steps

Wash spring onions and cut into 2cm slices

Heat olive oil in a deep pot and add he spring onions. Fry until soft but not brown

Add stock powder and water and cover with the lid of the pot until it begins to boil
- 4
Remove the lid of the pot and simmer for 10 minutes
- 5
Remove pot from stove and blend the soup using a stick blender until desired consistency is achieved (I like a chunky texture)

Add salt and pepper to taste

Top with feta cheese
