Steps

Soak the fruit in a bowl of hot water for 15mins.

Using some butter grease a medium casserole dish.

Whisk the egg in a bowl, then add the milk and cream and continue to whisk.

Butter the bread quite generously and spread with the Marmalade. Cut the slices of Bread into triangles.

Place a layer of bread, butter side up, in the casserole dish, with the triangles just overlapping. Now scatter half of the fruit, a third of the sugar and grate a little of the Nutmeg on top. Repeat with another layer.

Finally add another layer of bread, Nutmeg and sugar on top. Ensure no fruit on top as it will burn in the oven.

Carefully pour most of the milk mixture over the bread. You should save about 3tbsp. Set aside the casserole for 30mins to let the bread absorb the milk. Afterwards very gently press the bread down with a spatula and then add the rest of the milk.

Place the casserole on a baking dish, uncovered in a pre-heated oven at 180C (fan) for 35mins, turning once.
