Thandai is one of my favourite drink since I was a child .Iam sharing thandai recipe in my first recipe category.It is made in many many different ways.I am sharing a mixture of my mom's and my mother-in-laws recipe.I remember my mom used to grind almonds and other ingredients on the stone morsel (sil batta) .Here I am sharing the traditional way .It is a very refreshing and energetic drink during navratris.

Ingredients

  • 1 cupapprox 100 gms Almonds(badam)
  • 1/4 cupMuskmelon seeds(magaaj)
  • 2 tbspPoppy seeds(khus khus)
  • 2-3 tbspFennel seeds (saunf)
  • 1 tspto 2tsp Black pepper (kalimirch)
  • 1 tbspDry rose petals (optional)
  • 4-5Cardamom
  • to tasteSugar syrup
  • Milk
  • few strands Saffron soaked in warm milk

Steps

    Soak almonds for 5 hrs in a separate vessel.Soak fennel seeds,poppy seeds black pepper 5 hrs.Also soak musk melon seeds for 2 hrs.

    Remove skin from almonds.Strain fennel seed mixture and grind in the mixer.You can add water and make a fine paste.

    Deseed the cardamoms.Mix blanched and peeled almonds, muskmelon seeds and rose petals and grind them in the mixer. Start grinding on slow speed.kerp on mixing and then grinding alternatively. My idea is to make a thick and fine paste, without using water. This is done to increase the shelf life of almond mixture.

    Otherwise,you can easily add 1/4cup or less water to make a smooth paste without any hassle.You can keep this mixture for a week in the refrigerator very easily. Never add milk to the almond mixture.

    Make saffron mixture.Add saffron to warm milk and rub it to extract the flavour and colour of saffron. I generally do this step in microwave oven.Mix saffron and milk in a bowl and heat for 30seconds.Take a cup,it's a better idea.Milk will not spill in a cup

    Take 3cups sugar and 1cup water. It is used in making all types of #shakes and#moctails.Heat water and add sugar to the hot water.Keep stirring constantly on slow to medium flame.Switch off the gas when sugar is completely dissolved and the solution strata boiling.Never overheat the sugar solution otherwise sugar will crystallise.Cool and store it in refrigerator for 2month.

    Take 1/2litre milk.Add sugar syrup to taste. Add 1heaped tbsp of fennel seed mixture.stir and keep in the refrigerator for 1/2an hour. After half an hour strain the milk. Add two heaped tbsp of almond mixture, saffron milk and whisk it in the mixer or use hand mixer or stir it vigrously with a whisk.Thandai is ready to serve. Pour in glasses, garnish with pistachio flakes and serve chilled.

    For making a shake ideal for #navratri you can omit fennel seeds and poppy seeds. So make a paste of almond, melon seeds,few black pepper,cardamom.And proceed as the recipe says. Your #navratri special Almond milk shake is ready to enjoy
