Spicy butterflied prawns

Prepare egg, flour and breadcrumbs. Add some cayenne pepper to taste

Chop heads off the prawns. Using scissors, cut down the spine and take out the black vein. Remove shell but not tail. Slice gently down the spine and push flat to create butterfly effect. Dip in flour, then egg, then coat in breadcrumbs

Shallow fry for 3-4 mins turning once until golden brown, drain on kitchen paper and serve :)
