This is my mother’s Omu Rice. She was good at making Omu Rice like this shape.
Steps

Fry chicken and onion with butter

Put cooked rice and season with tomato paste and salt pepper.

Mix egg and mayonnaise well.

Heat the pan and pour egg mixture.

Soon stir with chopsticks and turn off the heat, still the surface is uncooked.

Put the tomato chicken rice on the half of the egg.

Put Omu rice on the dish like this

Make the good shape with kitchen paper and hands.

Garnish with ketchup and dried parsley.
