Quinoa, beans and vegetable soup

Steps

Heat oil in a pan add diced vegetables and cook on high flame.

Add 3-4 cherry tomatoes, water and salt,pepper. Allow it to boil.

Simmer for 5 minute now add vegetables stock, and quinoa. Cook on low flame for 5 minute. Add rest of all ingredients and cook for another 5-7minutes.

Garnish with cherry tomatoes and coriander leaves. Serve hot.
