My husband hates mushrooms and avocados, so when he’s not here ... 😁 This evening I had garlic mushrooms, with a side of toasted rolls topped with avocado. (Ancient grain rolls from Lidl, they’re delicious!)

Place the mushrooms on a lightly oiled baking tray.

In a bowl, mix the garlic with the olive oil. Then spoon the garlic oil onto the mushrooms.

Roast at 190 C for 20-30 mins depending on the size of your mushrooms. I topped mine with a dollop of vegan mayo (and of course a side of avo on toast) 😋
