Boil sweet potato, remove the skin and smash it into a bowl. Add milk powder, maida, baking soda and mix well. Add cardamom powder and mix. Mash khoya well, add to the sweet potato mixture and knead everything very well without any lumps.

Now divide into equal portions and make roundels without any cuts. Cook sugar and water stirring till we get one string consistency syrup. Then add saffron and green cardamom and mix well. Heat oil in a pan, place the jamun and mix it with wooden spoon on low flame until golden brown.

Transfer hot fried gulab jamun into slightly hot sugar syrup and allow it rest for 1-2 hours. Now sweet potato gulab jamun is ready to serve.
