Pour enough water over the bulgur to cover it and let it soak for about 15 minutes.

Grind the bulgur in a food processor about three times. The first time, process the bulgur alone. The second time, add the onion and lean veal. The third time, process until the mixture is well combined and forms a dough.

Prepare the filling: Sauté the onions until soft, then add the ground meat and cook with the onions until done. Add the spices, salt, black pepper, a pinch of cinnamon, and the chopped walnuts and pine nuts at the end.

Drain the filling in a strainer. Once cooled, shape the kibbeh dough into balls, hollow them out, and fill with the meat mixture. Fry the kibbeh in hot oil until golden brown. Enjoy!
