Ingredients

6 servings
  1. 1/2 cuponions, chopped
  2. 1/3 cupcarrot, chopped
  3. 1/3 cupcelery, chopped
  4. 1/2 cuppotato, cubed
  5. 1 cupzucchini, in chunks
  6. 4 cupschicken broth
  7. Optional: 1 cup rice, 1 cup spinach
  8. Salt and pepper
  9. 2 tablespoonslemon juice
  10. 1/4 cuptomato sauce, or diced ripe tomato

Steps

  1. 1

    Heat 1T olive oil in large pot (big enough for the whole soup)

  2. 2

    Add onions. Sauté 5 minutes, stirring. Add carrots and celery. Sauté 5 minutes. Add potato. Sauté 3-5 minutes Salt and pepper over the top.

    Add zucchini. Sauté 4 minutes.

  4. 4

    Add optional vegetable at this stage...asparagus, green beans, squash.

  5. 5

    Add chicken broth to cover all your vegetables. Bring to a simmer. Add tomato sauce (or chopped tomato). Simmer for 15-20 minutes

  6. 6

    Taste the broth. Add salt, if necessary. Check to see if potatoes are cooked through.

  7. 7

    Add cooked rice and spinach

  8. 8

    Add lemon juice.

  9. 9

    Serve with optional Parmesan cheese and maybe some bread!
