Heat 1T olive oil in large pot (big enough for the whole soup)

Add onions. Sauté 5 minutes, stirring. Add carrots and celery. Sauté 5 minutes. Add potato. Sauté 3-5 minutes Salt and pepper over the top.

Add zucchini. Sauté 4 minutes.

Add optional vegetable at this stage...asparagus, green beans, squash.

Add chicken broth to cover all your vegetables. Bring to a simmer. Add tomato sauce (or chopped tomato). Simmer for 15-20 minutes

Taste the broth. Add salt, if necessary. Check to see if potatoes are cooked through.

Add cooked rice and spinach

Add lemon juice.

Serve with optional Parmesan cheese and maybe some bread!
