You'll love this recipe if you're a fan of cornbread but your oven is out of service. This is a very simple solution.
Cooking Instructions

Melt 1 stick of butter in the microwave or on the stove.

In a blender, add the ingredients, but add the flour gradually. Blend very well and slowly to avoid damaging your blender.

Place the mixture in a bowl and mix everything well.

Grease the bottom and sides of a pressure cooker with butter and add a little flour. Note: Use plenty of butter and avoid leaving lumps or pieces of butter.

Then add the mixture to the pressure cooker and cook for 35 to 36 minutes over medium heat.

After 35 or 36 minutes, turn off the heat and let it cool for 15 minutes. To check if the bread is cooked, insert a knife; if it comes out clean, it's done. Loosen the edges a bit, remove from the mold, and serve.

My family would be ashamed of me because this is not exactly southern cornbread, but I like it kind of smooth (less crumbly) and what they don’t know won’t hurt them. The other sinful thing I like, which I would strongly suggest, is putting an obscene amount of buttermilk into this cornbread (more than the recipe calls for) and pulling it out of the oven early so the middle is still raw. We closely followed the Alber's Cornmeal cornbread recipe adding more sugar, melting Crisco shortening instead of using cooking oil, and adjusting the flour and cornmeal measurements. I use more flour and less cormeal instead of 50/50 so the cornbread does not crumble apart as bad. This is a sweeter cornbread with a cake like texture. So good! sandra53 -

I think this one is the winner winner chicken dinner. Presentation and taste. Although I love the honey butter version found here in Cookpad I was not in love with the cornbread recipe. I use Maple Syrup or the butter and honey recipe in cookpad (1/4 butter and 2 tablespoons local honey whipped and blended). Katatonickat
