This recipe will only be of use for people who live in an area where soap berries grow will as they are never farmed due to the tartness of their flavor but if you live in the northwestern us or western Canada you may be able to find them they are shiny red berries that if you do find them are very plentiful

The reason this recipe works and has been used by many native to western Canada is that when crushed these berries will froth and when mixed with a whisk they form a sort of meringue which will only be edible once equal parts of sugar has been added

Once you have whisked the berries and added sugar you can eat it at room temperature or freeze the meringue

Best served with ice cream
