  2. 7guajillo chiles
  3. 1/4onion
  4. 2garlic cloves
  5. 1 splashyour preferred oil
  6. 2tomatillos
  7. 2 cupscooked Peruvian beans or canned beans
  8. Salt and pepper to taste

Cooking Instructions

    Heat a pan with a splash of oil. Beat the 5 eggs with a pinch of salt. When the pan is hot, fry the eggs until they are well-cooked and yellow, then turn off the heat.

    For the adobo, cook the guajillo chiles in a pot with a little water along with the tomatillos. Blend the chiles with a little water, onion, garlic, and tomatillos, adding a pinch of salt.

    Turn the heat back on, place the eggs back in the pan to reheat, and pour the adobo over the eggs through a strainer. Let it cook for 10 minutes to allow the adobo to blend with the eggs.

    For the mashed refried beans, blend the two cups of beans with a little of their cooking broth and add a splash of oil. Then, heat a pan and pour in the mashed beans, frying them until ready to enjoy with a cold Coca-Cola.
