Ingredients

  1. 4-6tilapia filets
  2. 8 ozricotta cheese
  3. 8 ozparmesan cheese
  4. 2 Tbsplime juice
  5. 8 ozmushrooms sliced
  6. 8 ozdiced tomatoes (spicy if you like), drained
  7. 1/2good size onion, sliced and quartered
  8. 3 Tbspoil (either canola or olive)
  9. 2-3 patsbutter
  10. to tasteSalt and pepper

    Preheat oven to 400 degrees

  2. 2

    In a large oven ready saucepan combine the mushrooms, tomatoes, onion, and 1 tblspn oil and cook down.

  3. 3

    Add the spinach and rest of oil and cook till the spinach just starts to wilt. Do not cook till mushy.

  4. 4

    Add the ricotta cheese and mix well as the cheese melts.

  5. 5

    Remove the mixture from the pan.

  6. 6

    Add the fish to the pan. Salt and pepper both sides. Then spread about 1/2 the spinach/cheese mixture on top of the fish. Place another layer of fish then spread the rest of the mixture on top.

  7. 7

    Bake in a 400 degree preheated oven for about 30 minutes or until fish is flaky and done.
