Traditional foods of India include these soft and juicy coconut-centred rolled pancakes, called Surul Appams in Tamil Nadu. Ready in just 15 minutes, it can also be used as a quick evening snack
Steps

Mix the ingredients for the filling well. I use brown sugar, but regular sugar is fine.

Mix all the ingredients for the batter except water. Add required quantity of water after this to make a thin batter.

Heat a griddle/tawa and smear a bit of oil/ghee/butter.

Keep the heat low. Add a ladle of batter and spread into a thin pancake.

Flip over the pancake in a minute. You will see a few golden specs. Smear oil/ghee/butter

Add the filling to the centre in a line.

Turn up either side over the pancake. Take it off the heat.

Serve hot or cold to enjoy these traditional Surul Appams.
