Cook potatoes, mash them (I had some pepper in my mortar) so I just mashed it inside and gave it a bit of spiciness. My potatoes were a bit sticky add flour to make it easy to work with.

Add some butter to the mashed potatoes, mix and roll in balls, set aside in freezer for about 10 minutes. Meanwhile make the fillings

In a pan, add butter, once it has melt, add sausage, potatoes, carrots & spring onions.
Stir for about 3minutes then add flour, then milk.Once it thickens, add salt then cheese, it's optional. Set aside

Get the potatoes, flatten on a nylon, add the fillings. Roll the nylon and form a ball, securing the fillings. Flatten then place in the freezer for about 5minutes to harden.

Place oil on heat, coat the potatoes in flour then egg and breadcrumbs/cornflakes or golden morn. Fry until golden.
Serve with ketchup, slaw.
