Ingredients

  1. 3/4 cupheavy cream (200 ml)
  2. 3/4 cupwhole milk (200 ml)
  3. 3 tablespoonssugar (40 g)
  4. 4egg yolks
  5. 1vanilla bean
  6. 1/4 cuplight brown sugar (50 g) for topping

Steps

    Bring the milk to a boil.

  2. 2

    Add the vanilla bean and let it steep.

  3. 3

    Whisk the egg yolks with the sugar, then add the cream and the cooled milk (be sure to remove the vanilla bean).

  4. 4

    Pour the mixture into ramekins, place the ramekins in a water bath, and bake at 200°F (95°C) for 35 minutes or a little longer if needed.

  5. 5

    Let cool, then refrigerate.

  6. 6

    When ready to serve, sprinkle with brown sugar and caramelize the top with a kitchen torch.
