With summer on its way this is a quick and simple supper or side salad.
I added yellow peppers for some extra colour as I could not find yellow cherry tomatoes.

With summer on its way this is a quick and simple supper or side salad.
I added yellow peppers for some extra colour as I could not find yellow cherry tomatoes.
Steps

Slice the bread into chucks and dress with a little olive oil. And roast in a preheated oven at 180 degrees until golden brown
- 2
Combine all the other ingredients in a bowl and allow to marinade while the bread is toasting in the oven
- 3
To make the dressing combine olive oil, red wine vinegar, crushed garlic clove, mixed herbs and lemon juice. Season with salt and pepper to taste

Toss all the ingredients together and serve.
