If Fattoush and Greek salad had a love child...💖
Using up a bunch of stuff and made this fresh, crunchy salad that’s strong on flavour.
If you have some pita bread, toast it and chop it into the salad. (I didn’t have any but i added some toasted pumpkin seeds.)
Definitely let the dressing sink into the salad for at least 30mins - makes a big difference 😋

Ingredients

2 or 4+ as a side
  • 1cucumber, chopped
  • 1 cuptomatoes, chopped
  • 1red onion, peeled and chopped
  • 3spring onions, finely chopped
  • 1/2-3/4 cupflat leaf parsley, finely chopped
  • 1/2-3/4 cupmint leaves, finely chopped
  • feta cheese (vegan if you need it to be), crumbled or cut into cubes- optional
  • Za’atar
  • Toasted pita bread and/ or pumpkin seeds
  • Dressing
  • 2 tspextra virgin olive oil
  • Zest of 1 lemon (unwaxed)
  • Juice of 1 lemon
  • 1 tsprunny honey (or maple syrup if vegan)
  • 2-3 clovesgarlic, peeled and crushed
  • pinchsalt
  • Pinchblack pepper

Steps

  1. 1

    Put all the chopped vegetables in a bowl.

    Add the herbs.

    Make the dressing. Pour over the salad. Stir and let it sit for 30 mins (or more) so all the flavours meld.

    Add the feta. Sprinkle generously with za’atar. Add the pita/ seeds if you’re using. Enjoy 😋
