Delicious Chicken Tostadas on Patacón
Instead of the traditional corn tortilla, I used a larger patacón (fried green plantain) as the base for these tostadas. The result... delicious!
Steps
- 1
Peel the green plantains and cut each into 4 to 5 pieces. Fry in plenty of oil over medium heat.
- 2
Once they are soft, remove from the oil and flatten them. I used a tortilla press, but you can also use the bottom of a plate to flatten them.
- 3
They should be thin.
- 4
Fry again in plenty of oil until crispy, then place on paper towels to drain.
- 5
Season with salt or garlic salt to taste. To assemble the tostadas, spread refried beans on each patacón.
- 6
Add chicken and the rest of the ingredients as desired.
- 7
You can also make these with skirt steak. Delicious!
- 8
To prepare the chicken: Season the breasts with salt, pepper, ground garlic, dried oregano, and a little lemon juice. Let them marinate for a while, then cook in a skillet with a little oil.
