First of all we need to make a dough.

Knead a dough. For that take Maida in a bowl. Add salt and vinegar to it. Put 2tbsp of butter in it and mix it with Maida rubbing with your hands to make s bread like crumbles. Now by gradually adding cold water knead a dough.

Sprinkle little flour on your working station and knead the dough for 5-10 minute by stretch and fold method to make it smooth.

Cover the dough with clear wrap and keep it in fridge for 20 Minutes

In a clear wrap take butter and roll it to a square.

Keep it in the fridge for about 20 minutes.

Now take out the butter and dough. Roll the dough in square shape. Keep the butter in the middle of the rolled dough and cover it from all the sides.

Keep this packet in the fridge for another 20 minutes.

After 20 minutes take out the dough. Roll it again. Make a packet again and keep it in the fridge. Repeat this process 3-4 times. This helps in making the layers of dough.

Now finally roll the dough as even as possible. Cut the sides of the dough and cut it into strips.

Fold one side of the strip and cut it to make equal parts.

For stuffing take oil in a pan on medium heat. Crush in the boiled potatoes add green chilies along with all the dry masala. Cook it for few minutes. Let it cool.

Once the masala cools down put the filling in the middle of the dough and fold it. You can make square as well as triangles. Don’t use any water or Maida paste to close the openings of the patties. Just pinch it or use forks to seal it.

Bake these patties at 200*c for about 20-25 minutes or till it become golden brown. Enjoy it with ketchup or green chutney
