Ingredients

  1. 2.5lbs. Potatoes
  2. 1 T.Minced garlic
  3. 1/4 c.Olive oil
  4. 1dry ranch dressing packet
  5. 1dry onion soup mix packet
  6. to tasteSalt and pepper,
  7. 1 c.Shredded cheese

Cooking Instructions

    Cut your washed potatoes into bite-sized pieces. No need to peel them. I used Russett, because it is what I had. Any potato will do. Red, gold, Idaho....Place them in a big bowl.

    To that bowl of potatoes, add your oil, garlic, and dry seasonings mixes. Stir it good to coat the potatoes. Dump it into a 9 x 13 pan. Put in a 425* oven for 20 minutes.

    Take it out after 20 minutes and stir it around. My potatoes were getting close to being done already, so I continued on with the next step. If you cut bigger chunks...you may want to cook them another 10 minutes before moving on.

    At this point, sprinkle with cheese and return to oven until melted and bubbling. I also threw in a few chopped up chicken breasts I had before adding cheese. Maybe 10-15 minutes.
