I’m visiting my daughter in Kentucky and we’re needing some comfort food. Bad storms came through and my nerves are...😳this is pure convenience comfort. It’s a simple little pan of omg I needed that. It’s so NOT gummy. It’s just clean and super simple and the guy that invented country gravy mix deserves a Nobel prize.

Ingredients

  1. 1 lbhot or mild country sausage
  2. 6eggs beaten with a little salt
  3. 8 ozcheese of choice, I used cheddar, shredded
  4. 2 1/4 cupbaking mix
  5. 2/3 cupmilk
  6. 4 tbspbutter or margarine
  7. 2white country gravy packets
  8. 2 cupswater

Cooking Instructions

    Preheat oven to 375. Brown sausage, most of the way,in the pan you’re going to bake the casserole in. mine had very little fat in it so I didn’t drain.

    In a separate pan or skillet, melt the butter and scramble the eggs MOST of the way, and spread over sausage. Sprinkle with cheese.

    In a bowl, make your drop biscuits with the baking mix and milk. Using an ice cream scoop sprayed with cooking spray, dollop out your biscuits on top and sprinkle more cheese around the biscuits. I leave a crust edge because we love crispy browned cheese. Bake til biscuits are golden brown, about 20 minutes or less.

    In a saucepan, bring 2 cups of Water to a boil with 2 packets of white country gravy packets. Bring to a boil whisking almost constantly. Remove from heat. Slice a piece of casserole and cover with gravy!

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
