Based on the method for smoky grilled fattah.

In a large bowl, add the ground beef. Squeeze the grated onion well by hand, reserving the juice. Add the squeezed grated onion to the beef.

Add the spices and beef bouillon (optional; dissolve it in 1 tablespoon of hot water first for extra flavor). Mix everything together very well.

Shape the kofta mixture (I shaped them on wooden skewers, then removed the skewers). Refrigerate overnight to help them hold together, or chill for 1–2 hours if short on time.

Heat a nonstick skillet or grill pan and add butter or ghee. Grill the kofta, occasionally sprinkling with the reserved onion juice as they cook. When done, heat a piece of charcoal until red hot, place it in foil, drizzle with oil, and cover the kofta and charcoal tightly to infuse with smoke until the smoke stops. Enjoy!
