The first time I tried this cake was about ten years ago while on vacation in Mexico, at my grandmother’s house. It’s a well-known recipe in Mexico and in several other Latin American countries as well. We make it for special occasions, or for my father’s birthday when he’s feeling nostalgic for his homeland.

Ingredients

75 minutes
Serves 8 servings
  1. cake
  2. 6eggs
  3. 1/2 cupsugar (about 100 grams)
  4. 1 cupflour (about 125 grams)
  5. 1 packetbaking powder (such as Royal, about 2 teaspoons/8 grams)
  6. filling
  7. 1 cansweetened condensed milk (14 oz/397 grams)
  8. 1 canevaporated milk (12 oz/354 ml)
  9. 3/4 cupheavy cream (about 200 ml)
  10. 1 canpeaches in syrup
  11. Whipped cream

Steps

    Beat the egg whites with half of the sugar and the baking powder until stiff peaks form.

  2. 2

    Beat the egg yolks with the remaining sugar.

  3. 3

    Gently fold the two mixtures together and add the flour.

  4. 4

    Grease a baking pan with margarine and dust lightly with flour.

  5. 5

    Pour in the batter and bake at 350°F (180°C).

  6. 6

    Blend the three milks together using a blender.

  7. 7

    Let the cake cool, then slice it in half horizontally.

  8. 8

    Place the first half on a serving platter and pour over half of the milk mixture, letting it soak in without breaking the cake.

  9. 9

    Top with whipped cream and chopped peaches.

  10. 10

    Place the other half of the cake upside down on top, and pour over the remaining milk mixture as before.

  11. 11

    Decorate with whipped cream and peach slices or other fruits.
