Ingredients

  1. 2 1/2 lbsboneless pork shoulder (Boston butt)
  2. 2 tspkosher salt
  3. to tasteblack pepper
  4. 6 clovesgarlic
  5. 1 1/2 tspground cumin
  6. 1 packetsazon
  7. 1/2 tsporegano
  8. 3/4 cupchicken broth
  9. 3chipotle peppers in adobo sauce (or 3 tbsp pureed
  10. 2bay leaves
  11. 1/4 tspdry adobo seasoning
  12. 1/2 tspgarlic powder

Cooking Instructions

    Season pork shoulder with pepper and salt, then sear in instant pot with saute function until browned on all sides

    Allow meat to cool, then use a sharp knife to cut into meat and insert slivers of garlic throughout

  3. 3

    Combine cumin, sazon, oregano, dry adobo seasoning, and garlic powder, and rub into meat on all sides

  4. 4

    Add chicken broth, bay leaves, and Chipotle peppers to the pot. Cook using the meat function on high pressure for 45 minutes.
