Cooking Instructions

Create a roux with flour and cooking oil. Stir and cook on medium until roux turns a dark reddish brown

Add onions, peppers, celery, garlic, and okra. Cook for 8-10 minutes until vegetables tender.

Add chicken stock, Cajun seasoning, and Tabasco sauce. Bring to a boil, then stir in sausage. Add salt and pepper to taste

Simmer for 15 minutes, then add shrimp and cook a few minutes until done.

Serve over rice

Sausage and Seafood Gumbo
This recipe is adapted from Paul Prudohmme's recipe. If you don't want the crab and oysters, feel free to omit them, but add in 1 chicken breast or 2 chicken thighs, finely diced instead to give the soup some body. You may be tempted to use butter for the roux, but don't. It will burn and turn bitter. This recipe is easiest if you have two large pots, but if you don't, you can transfer the roux to a bowl, and use 1 pot.

Cajun Gumbo
"Cajun" style – Gumbo, uses no tomatoes. However all gumbos starts with the basic “holy trinity” (onions, peppers, & celery), a good stock, and various meat, fowl, and shellfish. The key is to make a roux and add okra or filé powder as a thickening agent. Adjust the ingredients and seasonings to your liking and “Laissez les bon temps rouler” [Let the good times roll!]
